VEGAN PUMPKIN COOKIES

INGREDIENTS

  • 1/2 cup coconut oil
  • 1 cup brown sugar
  • 1/3 cup pumpkin purée 
  • 1 1/2 tablespoon dairy free yogurt
  • 1 tbsp vanilla 
  • 1 1/2 to 2 cups gluten free flour
  • 1 1/4 teaspoon pumpkin pie spice 
  • 1 teaspoon cream of tartar 
  • 3/4 teaspoon baking soda 
  • 1/2 teaspoon salt 
  • 2 tablespoon sugar
  • 1 tablespoon cinnamon 

DIRECTIONS

  • Preheat oven to 350 degrees
  • In a bowl mix brown sugar and coconut oil (until fluffy) 
  • Add purée, yogurt and vanilla 
  • Once combined, add flour, salt, cream of tartar, baking soda, and pumpkin pie spice
  • Mix
  • Scoop in small balls and roll into cinnamon and sugar mixture
  • Bake on a lined baking sheet and smash them down slightly 
  • Bake for 10-15 min (until golden)
