VEGAN PUMPKIN COOKIES
INGREDIENTS
- 1/2 cup coconut oil
- 1 cup brown sugar
- 1/3 cup pumpkin purée
- 1 1/2 tablespoon dairy free yogurt
- 1 tbsp vanilla
- 1 1/2 to 2 cups gluten free flour
- 1 1/4 teaspoon pumpkin pie spice
- 1 teaspoon cream of tartar
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 2 tablespoon sugar
- 1 tablespoon cinnamon
DIRECTIONS
- Preheat oven to 350 degrees
- In a bowl mix brown sugar and coconut oil (until fluffy)
- Add purée, yogurt and vanilla
- Once combined, add flour, salt, cream of tartar, baking soda, and pumpkin pie spice
- Mix
- Scoop in small balls and roll into cinnamon and sugar mixture
- Bake on a lined baking sheet and smash them down slightly
- Bake for 10-15 min (until golden)
Cool and enjoy.
