Thumbprint cookies

INGREDIENTS

  • 1 cup + 1 tablespoon AP flour 
  • Pinch of salt (1/8 teaspoon)
  • 1/2 cup butter (unsalted)
  • 1/3 cup granulated sugar 
  • 1/2 teaspoon vanilla extract 
  • 1/4 teaspoon almond extract 
  • 1/4 cup seedless jam (any desired flavor)

Glaze:

  • 1/2 cup powdered sugar 
  • 1-2 teaspoon water 
  • 1/2 teaspoon almond extract 

DIRECTIONS

  • Preheat oven to 350 degrees 
  • In a small bowl mix flour and salt 
  • In a larger bowl beat sugar and butter together 
  • Add almond and vanilla extract, then add in the flour mixture 
  • Scoop dough into small balls (evenly sized) onto a baking sheet 
  • Make small indents in the middle of the cookies with your thumb 
  • Fill the indent with about 1/4-1/2 teaspoon jam 
  • Set to chill in fridge for around 20 min
  • Bake for 15-20 min 
  • Cool and make the glaze by mixing all ingredients together, adding water until you feel you have the right consistency 

Drizzle glaze onto the cookies and enjoy!
