Thumbprint cookies
INGREDIENTS
- 1 cup + 1 tablespoon AP flour
- Pinch of salt (1/8 teaspoon)
- 1/2 cup butter (unsalted)
- 1/3 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 1/4 cup seedless jam (any desired flavor)
Glaze:
- 1/2 cup powdered sugar
- 1-2 teaspoon water
- 1/2 teaspoon almond extract
DIRECTIONS
- Preheat oven to 350 degrees
- In a small bowl mix flour and salt
- In a larger bowl beat sugar and butter together
- Add almond and vanilla extract, then add in the flour mixture
- Scoop dough into small balls (evenly sized) onto a baking sheet
- Make small indents in the middle of the cookies with your thumb
- Fill the indent with about 1/4-1/2 teaspoon jam
- Set to chill in fridge for around 20 min
- Bake for 15-20 min
- Cool and make the glaze by mixing all ingredients together, adding water until you feel you have the right consistency
Drizzle glaze onto the cookies and enjoy!
