STRAWBERRY SHORTCAKE PARFAIT

INGREDIENTS

  • 1 2/3 cup AP flour
  • 1 1/2 teaspoon baking powder 
  • 1/2 cup butter (melted)
  • 1 1/4 cup sugar
  • 1 egg
  • 1/3 cup sour cream 
  • 1 cup milk
  • 1-2 tablespoon vanilla 
  • 1 container of strawberries 
  • 1 cup sugar
  • 2-3 tablespoon (or more) powdered sugar 
  • 2 cups heavy whipping cream
  • 1 tablespoon vanilla 

DIRECTIONS

  • Mix buster and sugar in a bowl 
  • Add egg, sour cream, milk, and vanilla, mix until combined 
  • Then add the flour and baking powder mixing really well together
  • Add the batter to a prepared pan
  • Bake at 350 for 15-20 min (until golden)
  • While that is baking add the strawberries (chopped) into a bowl with the sugar and mash together 
  • Stick that in the fridge for later
  • In a separate bowl add the whipping cream and vanilla mixing in 1 tbsp at a time of powdered sugar ( until desired sweetness) add vanilla 
  • Should be done once you see soft peaks 
  • Once the cake is done and is cooled, crumble it into pieces 
  • In mason jars layer the cake crumbles, strawberries and whipped cream
