Strawberry Lemon Pizza

INGREDIENTS

Cookie:

  • 1 cup salted butter
  • 1 cup granulated sugar
  • 1 egg
  • 1 teaspoon lemon juice
  • 1 tablespoon vanilla 
  • 1 teaspoon baking powder 
  • ½ teaspoon baking soda 
  • 2 ¼ cup ap flour

Frosting:

  • ½ cup softened butter
  • 8 ounces cream cheese
  • 1 tablespoon lemon zest
  • 1 tablespoon vanilla 
  • 2 cup powdered sugar 

Topped with about 8-10 oz fresh sliced strawberries 

DIRECTIONS

  1. Combine sugar and butter until combined. Add the vanilla, lemon juice and egg.
  2. Stir in the baking powder, baking soda, and flour.
  3. Put dough evenly pressed into a circle on a baking sheet with parchment paper. Bake at 350 degrees Fahrenheit for 15-17 minutes
  4. You can tell that they are done if the edges are golden brown. Once baked, set aside and let cool for frosting.
  5. For the frosting, mix together the cream cheese and butter. Once combined, add vanilla and lemon zest, slowly add in the powdered sugar.
  6. Once the cookie is cooled, add the frosting, evenly smooth it on top.
  7. Lastly, add the fresh strawberries and top with some more lemon zest (optional). 
  8. Cut the pieces however you like, and enjoy.
