Strawberry Lemon Pizza
INGREDIENTS
Cookie:
- 1 cup salted butter
- 1 cup granulated sugar
- 1 egg
- 1 teaspoon lemon juice
- 1 tablespoon vanilla
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 2 ¼ cup ap flour
Frosting:
- ½ cup softened butter
- 8 ounces cream cheese
- 1 tablespoon lemon zest
- 1 tablespoon vanilla
- 2 cup powdered sugar
Topped with about 8-10 oz fresh sliced strawberries
DIRECTIONS
- Combine sugar and butter until combined. Add the vanilla, lemon juice and egg.
- Stir in the baking powder, baking soda, and flour.
- Put dough evenly pressed into a circle on a baking sheet with parchment paper. Bake at 350 degrees Fahrenheit for 15-17 minutes
- You can tell that they are done if the edges are golden brown. Once baked, set aside and let cool for frosting.
- For the frosting, mix together the cream cheese and butter. Once combined, add vanilla and lemon zest, slowly add in the powdered sugar.
- Once the cookie is cooled, add the frosting, evenly smooth it on top.
- Lastly, add the fresh strawberries and top with some more lemon zest (optional).
- Cut the pieces however you like, and enjoy.
