NUTTY BLANKET BARS

INGREDIENTS

Caramel layer:

  • 1 1/4 cups dates (soaked five minutes in hot water)
  • 1/4 cup peanuts 
  • 3 tablespoons peanut butter 
  • 1/4 cup almond milk 
  • 3/4 cup protein powder (vanilla)
  • 1/3 cup maple syrup 
  • 1 3/4 cups almond flour 

Chocolate coating:

  • 1 1/2 cups dark chocolate chips 
  • 2 tablespoons coconut oil 

DIRECTIONS

  • Line a small baking dish with parchment paper.
  • In large bowl, add almond flour, maple syrup, protein powder, and almond milk
  • Mix until combined
  • Press into the baking dish, creating a base later. Freeze for 20 minutes
  • Start making caramel there in food processor, blend, soaked dates with peanut butter until smooth
  • Fold in the peanuts
  • Once first layer is frozen (hard) remove from freezer and add caramel sauce on top
  • Please back into the freezer and chill for an hour
  • After an hour, milk, chocolate with coconut oil
  • Remove from freezer and slice in the 12 bars
  • Cope with chocolate layer (fully coated) 
  • Plays on parchment paper, and repeat for each bar
  • Place in fridge/freezer for 12 to 15 minutes until hardened
