Caramel Apple Upside Down Cake
INGREDIENTS
- 1 cup granulated sugar
- 1 tablespoon vanilla extract
- ⅓ cup vegan heavy cream
- 3 medium sized apples (cored and sliced about ¼ inch)
Cake:
- ¼ cup sugar
- ½ cup brown sugar
- 3 eggs
- ½ cup non-dairy milk
- ⅓ cup canola oil or vegetable oil
- 1 tablespoon vanilla
- 1 ⅔ cup gluten free flour
- 1/2 teaspoon Xanthan gum
- 2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- ½ teaspoon ground ginger
- 1 medium sized apple (cored and diced into ½ inch pieces)
DIRECTIONS
- Grease 9-inch round cake pan
- Preheat oven to 350 degrees
- In a saucepan melt the sugar on medium heat (stir until amber color)
- Slowly add the heavy cream, and vanilla while stirring
- Pour the caramel into the lined pan
- Put the apple slices on top of caramel
- For the cake, add granulated sugar, brown sugar, eggs, non-dairy milk, oil and vanilla to bowl & whisk
- In a separate bowl mix the baking powder, xanthin gum, ginger, cinnamon, salt and gluten free flour
- Add dry ingredients to the wet and mix until combined
- Fold the apple slices into batter
- Pour batter over the caramel layer
- Bake for about 40-45 minutes
- You should be able to insert toothpick and have have it come out clean.
- Let the cake cool for 7-10 minutes
- Cut along the edges to loosen the cake
- Then invert the cake onto a larger plate
