Caramel Apple Upside Down Cake 

INGREDIENTS

  • 1 cup granulated sugar 
  • 1 tablespoon vanilla extract
  • ⅓  cup vegan heavy cream 
  • 3 medium sized apples (cored and sliced about ¼  inch)

Cake:

  • ¼  cup sugar
  • ½  cup brown sugar 
  • 3 eggs
  • ½  cup non-dairy milk
  • ⅓  cup canola oil or vegetable oil
  • 1 tablespoon vanilla 
  • 1 ⅔ cup gluten free flour
  • 1/2 teaspoon Xanthan gum 
  • 2 teaspoon baking powder
  • 1 teaspoon ground cinnamon 
  • ½  teaspoon salt 
  • ½  teaspoon ground ginger
  • 1 medium sized apple (cored and diced into ½  inch pieces)

DIRECTIONS

  1. Grease 9-inch round cake pan
  2. Preheat oven to 350 degrees
  3. In a saucepan melt the sugar on medium heat (stir until amber color)
  4. Slowly add the heavy cream, and vanilla while stirring
  5. Pour the caramel into the lined pan
  6. Put the apple slices on top of caramel
  7. For the cake, add granulated sugar, brown sugar, eggs, non-dairy milk, oil and vanilla to bowl & whisk
  8. In a separate bowl mix the baking powder, xanthin gum, ginger, cinnamon, salt and gluten free flour
  9. Add dry ingredients to the wet and mix until combined
  10. Fold the apple slices into batter
  11. Pour batter over the caramel layer
  12. Bake for about 40-45 minutes
  13. You should be able to insert toothpick and have have it come out clean.
  14. Let the cake cool for 7-10 minutes
  15. Cut along the edges to loosen the cake
  16. Then invert the cake onto a larger plate
